This Spring, these gluten- and dairy-free oat date bars have quickly become one of my favorite treats to make and share. Nourishing, naturally sweet, and packed with ingredients that align beautifully with Ayurvedic principles, this is the kind of recipe that satisfies both body and spirit.

🍯 The Recipe: Gluten & Dairy-Free Oat Date Bars
Date Filling
2 cups pitted dates
1 ½ cups water
Oatmeal Crust & Topping
1 cup gluten-free 1:1 flour (like Bob’s Red Mill or King Arthur)
¾ cup packed brown sugar (light or dark)
1 tsp ground cinnamon
½ tsp salt
½ tsp baking soda
8 Tbsp vegan butter (like Earth Balance), cubed
½ tsp vanilla extract
1 ½ cups certified gluten-free quick-cooking oats
1 Tbsp water
Optional Add-In: Chopped walnuts or pecans for a nutty twist
🧘♀️ Directions:
Make the Filling: In a medium saucepan, bring dates and water to a boil. Reduce to a simmer and cook until thick and jammy (about 20 minutes). Set aside to cool slightly.
Crust & Crumble: Preheat oven to 350°F. Line and grease a 9x13” baking dish.
In a food processor, pulse together the flour, brown sugar, cinnamon, salt, baking soda, and vanilla. Add the vegan butter and pulse until crumbly. Add oats and water, pulsing to combine.Assemble: Press half the oat mixture into the dish and bake for 10 minutes. Spread the date filling over the crust. Top with remaining oat mixture, press gently, and bake for 30–35 minutes or until golden and fragrant.
Cool & Slice: Let cool completely before slicing into bars.
Makes 12 large or 24 small bars. Store in an airtight container for up to 5 days refrigerated.
